Mediterranean Tuna Salad
serves about 4
2 6 ounce cans tuna
1 15 ounce can cannellini beans, drained and rinsed
1/4 of a large red onion, finely chopped
1 tablespoon capers
1/2 cup black olives, chopped
1/4 cup red wine vinegar
1 tablespoon olive oil
salt and pepper
Gently mix together the tuna, beans, onion, capers, olives, red wine vinegar, and olive oil. Add salt and pepper to your taste. Serve with lettuce or on toasted bread.
